The world-renowned restaurant Noma has been voted the world's best restaurant four times. Since 2018, the restaurant has operated with a seasonal concept, dividing the year into three seasons, where the menu matches the season's ingredients.
From January until the beginning of summer, the focus is on seafood. From summer until the beginning of autumn, the focus is on vegetables. Then, the focus shifts to game and forest until January. The new Noma has its own garden and a view over Christiania. The restaurant has room for only 40 guests and is open four days a week (Wednesday to Saturday). As something new, they also offer 4 waitlisted spots for students, who with a valid student ID can experience the meal for 1500 kroner.
Rene Redzepi is the head chef at Noma, excelling in Nordic cuisine. Superb ingredients are sourced from Iceland, the Faroe Islands, Greenland, and, of course, Denmark, with extremely high demands placed on suppliers. Redzepi has worked at several restaurants that have been awarded the maximum three stars (including El Bulli). So it's no surprise that Noma's food is absolutely fantastic.
